Awesome question! God rejected it because Cain’s motive wasn’t right. His heart wasn’t in the right condition. You see, Cain gave his offering without putting much thought into it. He didn’t honor God with his offering and he certainly didn’t give his best crops as a joyful offering.
Abel, on the other hand, picked his finest sheep and brought the fat portions of the firstborn of his flock. He wanted to honor God and gave with a joyful heart.
God tried to give Cain a second chance to make it right and even warned Cain that sin was crouching at his door but did Cain listen? No! Instead of going back and finding the best crops and giving it joyfully to God, Cain killed Abel.
And so we have the first murder ever recorded in the history of man. See what sin can do?!?! Yikes!!!
